It never fails.  I attempt to make my husband and I dippy eggs and one always ends up cracked. I finally have the answer.  Sheet pan breakfast.  It solves so many problems.  Broken yolks and the business of trying to keep everything warm while you prepare the eggs becomes virtually a non-issue. Egg and Potato Sheet Pan Breakfast is here just in time for the holidays my friends. I made this one for 2, but all you need is a bigger sheet pan and extra ingredients to make it for a crowd.

You can get as creative with this as you want. consider this a base recipe.  You could add some sausage links, use sweet potatoes, or add in some pepper, onion, and ham if that’s your thing.  Get creative and please take a picture so I can see what you come up with.

This Egg and Potato Sheet Pan Breakfast is absolutely basic and topped with Avocado.  I like heat so I go for some crushed red pepper and plenty of black pepper. I think Trader Joe’s Everything But the Bagel Seasoning would also be good.  I am so excited to make more of these.  Sheet pan breakfast is definitely a game changer.

Keeping the Eggs in Place

The cutest thing about this breakfast is the way it looks on the plate.  You’re going to bake your potatoes until crispy and then make little potato nests. The potato nests will keep the eggs from flowing all over and when you plate it they kind of stick together. Adorable right?

Egg and Potato Sheet Pan Breakfast

Egg and Potato Sheet Pan Breakfast

Egg and Potato Sheet Pan Breakfast is the perfect way to serve breakfast to a crowd. Sunny side up eggs and crispy breakfast potatoes in one pan.
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 2 people

Ingredients
  

  • 3 medium Russett Potatoes cut into 1 inch cubes
  • 4 large eggs
  • 1/2 Avocado cubed or sliced
  • Cooking Spray
  • salt and pepper to taste
  • Crushed Red Pepper to taste

Instructions
 

  • Preheat Oven to 400 degrees.
  • Line a baking sheet with parchment paper. Spray the parchment with olive oil cooking spray. Put the potatoes onto the pan and sprinkle evenly with salt and pepper. Spray the tops of the potatoes with the cooking spray.
  • Bake the potatoes for 20 minutes. Flip then bake another 10. If the potatoes aren't as brown as you like, turn the broiler on them for 2 minutes.
  • Remove the pan from the oven and make nests for the eggs. You want potatoes lining all sides of the egg so it doesn't run every where.
  • Crack an egg into each nest and sprinkle with salt, pepper, and crushed red pepper (optional). If you turned the broiler on, be sure to turn the heat back to 400 degrees.
  • Return the pan to the oven and bake for 5-8 minutes. We were happy with our yolks after 7 minutes. This produced a nice firm yolk on the edges with the perfect amount of softness in the center.
  • Top with avocado and serve.

This is what I call an innovative recipe, classic ingredients to create a classic dish, but made in a healthier and easier wasy, this is truly impressive!
