Banana Berry Protein Pancakes

Banana Berry Protein Pancakes are the easiest gluten free protein pancake recipe. You can whip these up any day of the week to enjoy fluffy and filling pancakes for breakfast.

Ingredients

  • 1 Banana ripened
  • 1/4 cup Vanilla Protein Powder I use Tone It Up brand from Target.
  • 1 egg
  • 3 tbsp. Egg Whites I use the ones in the carton for convenience.
  • 1/2 tsp. ground cinnamon
  • 1/4 cup Strawberries for topping
  • 1/4 cup blueberries for topping
  • 1 tbsp Almond Butter for drizzling

Instructions

  • In a bowl mash the banana leaving just a few chunks for texture.
  • Add in the egg, egg whites, protein powder and cinnamon. Stir to combine.
  • Heat a skillet over medium-high heat. Spray with coconut oil spray. When the skillet is hot drop the pancakes onto the skillet in 1/4 cup portions.
  • When the pancakes start to look done on the edges and bubble, flip them.
  • Top the finished pancakes with berries and a drizzle of almond butter or maple syrup.

Notes

Don't have protein powder?  Add in a 1/4 cup of oat flour in place of the protein powder. To make your own oat flour just pulse regular oats in the food processor until they resemble flour. Subbing oat flour will change the protein and carbohydrate amounts in this recipe. The nutrition is calculated using the protein powder.
