Asian Salmon Chopped Salad

Asian Salmon Chopped Salad is a delicious easy weeknight meal. Using a little help from the store you can have a meal on the table in under 20 minutes.

Ingredients

  • 1 Asian Chopped Salad Kit I got mine from Aldi, but other brands make them.
  • 2 6 oz. Pieces of Salmon Skin Removed
  • 1 tbsp. Dijon Mustard
  • 1/4 cup Reduced Sodium Soy Sauce
  • 2 tbsp. Lime Juice
  • 2 tsp. Garlic
  • Salt
  • Pepper
  • Sesame Seeds for garnish

Instructions

  • Marinate the salmon for 2 hours.
  • Preheat a skillet over medium high heat. Add a light coating of avocado oil to coat the pan.
  • Remove the salmon and shake off the excess marinade.
  • Add it the hot pan and sear it on each side for 4-5 minutes or until the salmon flakes easily. Don't over cook it.
  • Dump the salad into a big bowl and toss it with the dressing. I really liked the one from Aldi so I just used that versus making my own. You can use your dressing of choice. The convenience of the kit is already having the vegetables finely chopped.
  • Lay the salmon on top of the salad mix and serve.
