Ingredients

  • 2 large Eggs
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Oil
  • 1/2 cup Milk Any will do- even almond or cashew milk
  • 1 tsp. Vanilla
  • 1.5 cups Apple Finely Chopped- About 1 large apple or 2 small.
  • 2.5 cups Flour
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 tsp. Cinnamon

Cinnamon Sugar Mix

  • 1 tbsp. Sugar
  • 1 tsp. Cinnamon

Instructions

  • Preheat oven to 350 degrees.
    In a large bowl, mix together the flour, baking powder, baking soda, salt and 1 tsp. of cinnamon.
  • Chop your apples and toss together with cinnamon sugar mix.
  • Beat together the sugar, brown sugar and oil.
  • Add your eggs in one at a time and beat together.
  • Add in milk and beat until all wet ingredients are combined.
  • Slowly add the dry ingredients in 3 batches until just combined. Do not over mix.
  • Fold in your apple cinnamon mixture, reserving a few pieces for the top to be decorative (optional).
  • Bake at 350 for 55-65 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs.
