2largeEggs
1/2cupSugar
1/2cupBrown Sugar
1/2 cup Oil
1/2 cup MilkAny will do- even almond or cashew milk
1tsp. Vanilla
1.5cupsAppleFinely Chopped- About 1 large apple or 2 small.
2.5cupsFlour
1tsp. Baking Powder
1/2tsp.Baking Soda
1/4 tsp. Salt
1tsp. Cinnamon

1tbsp.Sugar
1tsp.Cinnamon
Instructions
Preheat oven to 350 degrees.In a large bowl, mix together the flour, baking powder, baking soda, salt and 1 tsp. of cinnamon.
Chop your apples and toss together with cinnamon sugar mix.
Beat together the sugar, brown sugar and oil.
Add your eggs in one at a time and beat together.
Add in milk and beat until all wet ingredients are combined.
Slowly add the dry ingredients in 3 batches until just combined. Do not over mix.
Fold in your apple cinnamon mixture, reserving a few pieces for the top to be decorative (optional).
Bake at 350 for 55-65 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs.
