Ingredients
4large Flounder Fillets
8ounces Crab MeatI use pasteurized crab meat. It's always labeled "special" and includes some lump, but also a lot of meat from the body of the crab.
2tsp. Mustard
2tbsp.Light MayoI use olive oil mayo
1large egg
2tsp.Old Bay
1/3cupBread Crumbs
1/4cup Parsley
Juice of one lemon Slices for garnish
Instructions
Mix together crab meat, mustard, mayo, old bay, egg, and bread crumbs.
8 ounces Crab Meat, 2 tsp. Mustard, 2 tbsp. Light Mayo, 1 large egg, 2 tsp. Old Bay, 1/3 cup Bread Crumbs
Set the crab mix aside and prepare a baking sheet with a thin coating of olive oil. Place into an oven and set it to preheat to 400 degrees.
Take out your flounder fillets and dry them well with paper towels. You want your fish to brown on the baking sheet and not steam.
4 large Flounder Fillets
When the oven is preheated, pull the baking sheet out and place your flounder fillets onto it. Lightly salt and pepper the fillets.
Top each with 1/4 of the crab mixture. Spray the tops of the fillets with cooking spray and put into the oven for 13-18 minutes ( depends on thickness of fillet)
Garnish with parsley, fresh lemon slices and juice and serve!
