Peanut Butter and Jam Baked Oatmeal Bars are a delicious and healthy breakfast or snack. Peanut Butter, honey, strawberry jam, and whole grain oats come together in this tasty treat.
Preheat the oven to 350 degrees.
In the bowl of a stand mixer or using a hand mixer and large bowl- mix together the peanut butter, honey, eggs, vanilla and salt until combined.
Add in the oats, baking powder and baking soda. Mix together. Turn the mixer up to high speed for 15 seconds at the end to break up the oats a bit and combine everything.
Spray an 8x8 baking dish with cooking spray. Press the oatmeal mixture into the pan. Using the back of a teaspoon and make 9 divots into the mixture. This is where your jam will go. Make them equal distance apart as they will serve as guides for cutting the bars evenly.
Spoon 1 tsp. of strawberry (or your flavor of choice) jam into those divots. Bake at 350 degrees and allow to cool completely before you cut and serve.
