Peanut Butter and Jam Baked Oatmeal Bars

Peanut Butter and Jam Baked Oatmeal Bars are a delicious and healthy breakfast or snack. Peanut Butter, honey, strawberry jam, and whole grain oats come together in this tasty treat.

Ingredients

  • 1/2 cup Smooth Natural Peanut Butter Choose one that doesn't have a lot of oil.
  • 2 large Eggs
  • 1/4 cup Honey
  • 1/2 tsp. Vanilla
  • 1/4 tsp. Salt
  • 2.5 cups Old Fashioned Oats Be sure these are certified gluten free if you need to be sure they are gluten free.
  • 1 tsp. Baking Soda
  • 1/2 tsp. Baking Powder
  • 9 tsp. Strawberry Jam Use an all fruit jam. Organic if possible.

Instructions

  • Preheat the oven to 350 degrees.
    In the bowl of a stand mixer or using a hand mixer and large bowl- mix together the peanut butter, honey, eggs, vanilla and salt until combined.
  • Add in the oats, baking powder and baking soda. Mix together.  Turn the mixer up to high speed for 15 seconds at the end to break up the oats a bit and combine everything.
  • Spray an 8x8 baking dish with cooking spray.  Press the oatmeal mixture into the pan.  Using the back of a teaspoon and make 9 divots into the mixture. This is where your jam will go. Make them equal distance apart as they will serve as guides for cutting the bars evenly.
  • Spoon 1 tsp. of strawberry (or your flavor of choice) jam into those divots.  Bake at 350 degrees and allow to cool completely before you cut and serve.
