Whole Wheat French Toast Sticks are an easy kid friendly breakfast option. Make a big batch on the weekend and freeze them for easy breakfast all week long.
Preheat a griddle or cast iron pan to medium high heat. Mix the cinnamon and sugar together on a plate and set aside.
Mix together the eggs, milk, cinnamon and vanilla. When the pan is hot add about 1/2 tbsp of butter to it and allow it to melt.
Cut the bread into strips of 4. Dip them into the egg mixture and cook 3-4 minutes per side at medium heat.
As you remove each one from the pan immediately roll it in the cinnamon sugar mixture.
Allow the french toast sticks to cool on a rack completely. Wrap them in parchment paper in packs of 4-6 and store in the freezer. When you're ready to heat put them in a toaster oven for 6-8 minutes at 400 degrees or until warmed through.
