5large DatesPitted
1/2cupWater
Instructions
Place the pitted dates into a mesauring cup. I used a one cup measuring cup.
Cover the dates with hot water. About 1/2 cup.
Allow dates to soak for 30 minutes until they are nice and soft.
Remove the dates fromt the water and place them in the bowl of a food processor. Save the water the dates were in.
Pulse the dates until they start to break down. Add a little water at a time until a paste forms.
Store the paste in an airtight container. Use it in cooking and sauces as a replacement for sugar 1:1. I haven't tested this in baking recipes so I can't speak to how it would work. In cooking savory dishes that require honey or sugar you should use it as a 1:1 replacement for honey or sugar.
Notes
Date paste will keep in the fridge for 2-3 months.
