In the bowl of a stand mixer or large bowl if you are using a hand mixer put the avocado oil, butter, egg, yogurt, vanilla and sugar. Mix together until well combined.
1/4 cup avocado oil, 1 egg, 1/2 cup Non Fat Plain Greek Yogurt, 2 tbsp. butter, 3/4 cup sugar, 1 tsp. vanilla
Add the dry ingredients slowly into the wet ingredients. Add in 2-3 batches and mix until just combined.
3/4 cup blueberries
Fold the blueberries into the batter. Scoop the batter into the muffin liners and sprinkle with sugar.
Bake for 15-17 minutes or until a toothpick inserted in the center comes out clean.
