Low Calorie High Protein Healthy Blueberry Muffins Recipe

Who doesn’t love a delicious blueberry muffin from the local bakery?  While most healthy muffins just don’t match up for me, this Low Calorie High Protein Healthy Blueberry Muffins Recipe is the muffin recipe I’m most proud of.

It has fresh blueberries, greek Yogurt (for protein- no powders!) and in my opinion they are the best blueberry muffins I’ve ever made and that includes the less healthy versions. So let’s get to work here and make some blueberry muffins you’ll feel good about eating!

Low Calorie High Protein Healthy Blueberry Muffins Recipe

I make these muffins using my stand mixer, but you can also use a large bowl and a hand mixer.  You’ll first mix together the dry ingredients and set those aside.  In the bowl of your stand mixer  (or your large mixing bowl if using a hand mixer) you’ll mix together the wet ingredients.  These are keys to making tender muffins. Over mixing is the enemy.

I use a combo of butter and avocado oil.  This lends the best flavor and texture.  I tried to take all the things we know about making good muffins and apply it to this healthy blueberry muffin recipe. I also use all real food ingredients.

You will not find things like sugar substitute in this recipe.  I would prefer to go low sugar and use a real food ingredient. We often end up vilifying certain foods when it is really the quantity we consume which proves to be problematic. 

I use a regular size muffin pan for this recipe, however I do use this tulip style parchment muffin cups.  This allows me to fill the muffin tin all the way with muffin batter and get a nice rise on these fluffy muffins.  Please note the link to the muffin cups is an Amazon Associate’s Affiliate Link.  These links provide me a small commission when you buy using them. If you choose to use regular muffin cups with muffin liners, you’ll need to be sure you adjust how you fill them so they don’t come up over.  You may get more like 10-12 standard size muffins this way and you’ll want to monitor the cook time.

Substitutions for Low Calorie High Protein Healthy Blueberry Muffins Recipe

I cannot recommend too many variations on this muffin recipe.  When you’re making a healthier muffin, you can’t take everything away or it’s going to go flavorless quick . I cannot recommend a dairy free alternative here. This recipe was tested with Greek Yogurt and that’s what contributes to the protein content.

If you don’t have avocado oil you could sub in vegetable oil, coconut oil, canola oil or olive oil.  I prefer a more flavorless oil so that’s why I chose avocado oil. If you’ don’t mind the flavor of olive oil or coconut oil in your baked goods, feel free to sub those.

Some recipes will sub in oils for unsweetened applesauce. I’m not a fan of this as it usually leads to dryer baked goods that don’t brown nicely. For the best texture- use real oil.

This recipe uses all purpose flour.  I cannot recommend that you sub in oat flour or almond flour.  If you’d like to increase the whole grains, you could sub in 50% of the white flour for white whole wheat flour.  If you need this to be gluten free, I can only recommend that you use a 1:1 gluten-free flour substitute.  

I do not  like frozen blueberries for these muffins as they tend to bleed all over. 

Regular whole wheat flour is not recommended here.  It will just be far too dense. 

How to store Leftover Blueberry Muffins

You will want to cool your muffins on a cooling rack and be sure they are room temperature.  Then you can keep them in an airtight container for 2-3 days.  You can also freeze these muffins in freezer bags for up to 3 months.

To enjoy your muffins from frozen just allow to thaw on the countertop and then reheat in the oven or microwave.  These low calorie blueberry muffins are great for meal prep!

Ingredients
  

  • 1.5 cups All Purpose Flour
  • 1.5 tsp. Baking Powder
  • 1 tsp. Baking soda
  • 1/4 cup avocado oil
  • 1 egg
  • 1/2 cup Non Fat Plain Greek Yogurt
  • 2 tbsp. butter softened
  • 3/4 cup sugar plus a little more for sprinkling on top before baking
  • 1 tsp. vanilla
  • 3/4 cup blueberries

Instructions
 

  • Preheat oven to 375 degrees
    Mix together the flour baking powder and baking soda in a medium sized bowl.
    1.5 cups All Purpose Flour, 1 tsp. Baking soda, 1.5 tsp. Baking Powder
  • In the bowl of a stand mixer or large bowl if you are using a hand mixer put the avocado oil, butter, egg, yogurt, vanilla and sugar. Mix together until well combined.
    1/4 cup avocado oil, 1 egg, 1/2 cup Non Fat Plain Greek Yogurt, 2 tbsp. butter, 3/4 cup sugar, 1 tsp. vanilla
  • Add the dry ingredients slowly into the wet ingredients. Add in 2-3 batches and mix until just combined.
    3/4 cup blueberries
  • Fold the blueberries into the batter. Scoop the batter into the muffin liners and sprinkle with sugar.
  • Bake for 15-17 minutes or until a toothpick inserted in the center comes out clean.
