Preheat oven to 375 degrees. Start by cooking your onion, carrot and garlic until soft. The onion should be translucent. Add 1 tbsp. of olive oil to a pan and saute for 5-7 minutes or until onion is translucent and carrots are softened.

When carrot, onion and garlic is done add it to a large bowl with the oats, milk, Worcestershire, Dijon, Tomato Paste, salt, pepper and egg. Whisk together.
1/2 cup Quick Oats, 1/4 cup Milk, 1 tsp. Worcestershire, 1 tbsp. Dijon, 1 tbsp. Tomato Paste, 2 tsp. Salt, 1 tsp. Pepper, 1 large Egg
Add the ground beef and using your hands or a fork lightly mix until everything is well incorporated.

Place meatloaf mixture onto a sheet tray drizzled with olive oil and form it into a loaf. The loaf should be about 13-14 inches long and 6 inches wide. This doesn't have to be exact just make sure the thickness is consistent for even cooking.
Bake for 30 minutes. In the mean time mix up sauce ingredients (1/2 cup unsweet ketchup, Dijon and coconut sugar)
1/2 cup Unsweetened Ketchup, 2 tbsp. Coconut Sugar, 1 tbsp. Dijon Mustard
After 30 minutes add the sauce to the top and cook another 10-15 minutes or until a thermometer reaches 160 degrees and meat is cooked through.
Allow to sit for 20-30 minutes then slice and serve!
