Okay so my first tip is do not put this meatloaf in a loaf pan.  Loaf pans don’t create those crispy edges.  Your meat sort of steams and it’s just not ideal, so I always do a baking sheet!  Just put the meat mixture onto the baking sheet and form it into a loaf shape.

​You want to be sure you saute any vegetables you’re going to put into your meatloaf.  The vegetables will be crunchy if you don’t and it just develops their flavor. The few extra minutes are absolutely worth it!

I know if you’re following a low carb diet you’re going to try and limit carbs. I’m using oats in this recipe.  It is only 1/2 a cup and the extra fiber is incredibly helpful!  Do not obsess over this.  Sure you could use parmesan cheese or almond flour , but I promise you the result will not be the same.

If you are on a keto diet then you may need to make this substitution, but this is not necessary if you are just trying to generally cut carbs down and be balanced. 

Last, use a large bowl!  You want the meatloaf mixture to be well mixed, but not tough.  Using a large bowl will allow you to mix it well without taking it too far.  It will become tough with over mixing.

Substitutions for This Recipe

This recipe uses a combo of garlic, onion, carrot, and tomato paste to create that classic meatloaf flavor profile.  I also added worcestershire sauce to create that unami flavor in the beef.  

You could replace the fresh garlic with garlic powder.  For the veggies, green pepper is a nice addition and so is spinach!  Meatloaf is a great way to sneak in veggies.  The veggies also add moisture which makes for a delicious meatloaf.

If you don’t have tomato paste, then tomato sauce is perfect.  You could also use tomato sauce as a substitute for the sugar-free ketchup in the topping if you’re unable to find it!  

When it comes to the oatmeal in this recipe, know that you can sub in almond flour, parmesan cheese , pork rinds or even bread crumbs!  I just don’t recommend trying to use things like coconut flour.  This recipe is fluffy and holds together well because of the oats!

The recipe only has 19 carbs for a 6 ounce serving.  Notice it’s low carb not NO CARB and some of those are from carrots and onions!

You can also use regular ketchup in the sauce.  It will just add carbs and sugar to the recipe.

I’d rather use a little of something and get a fantastic result than use none of it and get a less than impressive result.  Keto recipes tend to use the pork rinds, but I just can’t see trading a wholesome and good for you food like oats for an overly processed, high in saturated fat thing like that.  My recipes are formulated with health as the main concern.

How do I know when meatloaf is done?

The meatloaf is done when the internal temperature is 160 degrees. Just measure this with a meat thermometer. This meatloaf is made with all lean ground beef.  I also prefer grass-fed ground beef, but if you can’t find that it’s ok!

How should I store leftover meatloaf?

Left overs are great for meal prep!  The meatloaf will keep well in an airtight container for 3-4 days.  It also freezes well for up to 3 months.  I like to use my vacuum sealer.  You can easily freeze the cooked meatloaf and just pull out a few slices for dinner!

This easy and delicious low carb meatloaf is lower in carbs than traditional recipes, but has enough that you will think you're eating that same delicious meatloaf your mom used to make. The ultimate healthy version of this delicious comfort food!

Ingredients
  

  • 1/2 cup Onion finely chopped
  • 1/2 cup carrot finely grated
  • 1 tbsp. garlic minced
  • 1.5 lb Ground Beef 90% lean- do not use leaner than 90% or higher fat than 85%
  • 1/2 cup Quick Oats
  • 1/4 cup Milk
  • 1 tsp. Worcestershire
  • 1 tbsp. Dijon
  • 1 tbsp. Tomato Paste
  • 2 tsp. Salt
  • 1 tsp. Pepper
  • 1 large Egg

For Topping

  • 1/2 cup Unsweetened Ketchup I like Primal Kitchen Brand
  • 1 tbsp. Dijon Mustard
  • 2 tbsp. Coconut Sugar Brown sugar is also fine

Instructions
 

  • Preheat oven to 375 degrees. Start by cooking your onion, carrot and garlic until soft. The onion should be translucent. Add 1 tbsp. of olive oil to a pan and saute for 5-7 minutes or until onion is translucent and carrots are softened.
    1/2 cup Onion, 1 tbsp. garlic, 1/2 cup carrot
  • When carrot, onion and garlic is done add it to a large bowl with the oats, milk, Worcestershire, Dijon, Tomato Paste, salt, pepper and egg. Whisk together.
    1/2 cup Quick Oats, 1/4 cup Milk, 1 tsp. Worcestershire, 1 tbsp. Dijon, 1 tbsp. Tomato Paste, 2 tsp. Salt, 1 tsp. Pepper, 1 large Egg
  • Add the ground beef and using your hands or a fork lightly mix until everything is well incorporated.
    1.5 lb Ground Beef
  • Place meatloaf mixture onto a sheet tray drizzled with olive oil and form it into a loaf. The loaf should be about 13-14 inches long and 6 inches wide. This doesn't have to be exact just make sure the thickness is consistent for even cooking.
  • Bake for 30 minutes. In the mean time mix up sauce ingredients (1/2 cup unsweet ketchup, Dijon and coconut sugar)
    1/2 cup Unsweetened Ketchup, 2 tbsp. Coconut Sugar, 1 tbsp. Dijon Mustard
  • After 30 minutes add the sauce to the top and cook another 10-15 minutes or until a thermometer reaches 160 degrees and meat is cooked through.
  • Allow to sit for 20-30 minutes then slice and serve!
