Blueberry Oatmeal Super Food Protein Bowls

If you are following me on Instagram, you will notice that a few days a week I have oatmeal bowls.  I really enjoy oatmeal.  In fact I enjoy it so much, my husband affectionately refers to me as “Oatsy” every time I have a bowl.  He’s corny like that.

Lucky for him, I think it’s cute. These Blueberry Oatmeal Super Food Bowls are so delicious.  Texture is everything when it comes to oatmeal. So, if you feel like you’re eating a bowl of mush, read on and learn how to love oatmeal.

What’s in Blueberry Oatmeal Super Food Protein Bowls?

The base of the bowl is of course the oats, cinnamon and almond milk.  I use unsweetened vanilla almond milk.  I highly recommend making your own oatmeal from plain oats versus buying those flavored oatmeal packets.  They are full of sugar and this tastes so much better. Trust.

After you stir in the cinnamon and almond milk , you’ll just arrange some granola, hemp seeds, banana, blueberries and a dollop of almond butter on top.  You have the softness in the oatmeal.  The crunch of the granola and that creamy almond butter. Yum! Yum!

The bulk of the protein in this bowl comes from the hemp seeds.  I like to order my hemp seeds on Amazon. This is where I find the best price. They have a slightly nutty flavor, but they are a perfect plant based protein source. How about that? 😉

What Kind of Granola is best with Oatmeal?

You need to be careful in selecting your  granola.  When I originally set out to eat healthier, I thought all granola was created equal.  That is until I took a look at the side of the box one morning and realized it had the sugar of a donut and more calories than a biscuit.

After trying a ton of granolas and hating them, I am a Purely Elizabeth addict forever. It’s low in sugar and gluten free.  I get mine at my local Target store or Amazon (I’ll link below).

Oat options for Blueberry Oatmeal Super Food Protein Bowls

I use regular old fashioned oats. These are the ones that take 5 minutes to cook on the stove. If you are in a hurry you could use the quick cooking kind. These usually take around a minute.  They are also easily made with just hot water. Great option if you’re at the office.

Another way I like to enjoy these bowls is with steel cut oats. To prep ahead I’ll make a big batch of steel cut oats at the beginning of the week. Then, all I need to do is reheat the oats and add in the toppings.

Nut Butter with Oatmeal

The same is true for Naturally More almond butter.  It’s roasted and has a hint of salt in it and filled with probiotics. I really like to think through what’s going into each of my meals to get the most nutritional bang for my buck. This Blueberry Oatmeal Super Food Protein Bowl is a winner because it hits them all.

Blueberry Oatmeal Super Food Protein Bowls

Blueberry Oatmeal Super Food Protein Bowls are filled with oats, blueberries, hemp seeds, gluten free granola and almond butter. Delicious and Easy.

Cook Time 2 minutes
Total Time 12 minutes
Servings 2 people
Calories 358 kcal

Ingredients

  • 1/2 cup Quick Cooking Oats Use certified gluten free if you want these to be truly gluten free.
  • 1/2 cup Gluten Free Granola Recommended: Purely Elizabeth
  • 1/2 Banana sliced
  • 1/2 cup blueberries
  • 1 tbsp. Hemp Seeds
  • 1/4 cup Unsweetened Almond Milk
  • 1/2 tbsp. Almond Butter Recommended: Naturally More Brand
  • 1/2 tsp. ground cinnamon

Instructions

  1. Cook oats according to package instructions. Quick oats work perfectly for this recipe and take only 1 minute.
  2. Stir in 1/2 tsp. of cinnamon and the almond milk.
  3. Slice the banana and wash your blueberries. Arrange the banana, blueberries, granola, hemp seeds, and almond butter on top. ENJOY.
