You put the pot roast in there and let it go all day while you’re at work, but this easy recipe for 3 ingredient crock pot chicken tacos is sure to become a family favorite for busy summer nights. All you need is Salsa Verde, taco seasoning and chicken for these 3 Ingredient Slow Cooker Salsa Verde Chicken Tacos.
What do you need for 3 Ingredient Crock Pot Chicken Tacos?
This crockpot chicken tacos recipe uses boneless skinless chicken breasts, taco seasoning, and salsa verde. I like McCormick’s brand Street Taco seasoning, but if you can’t find that, just use your favorite. You can also use homemade taco seasoning.
For the salsa, I like to use Herdez brand Salsa Verde. Again, all that is important is that you use something you really like. You will use half of a 16 ounce jar of salsa.
It is literally 5 minutes of prep time to make this easy shredded chicken taco meat. In my opinion, simple ingredients make the best meals and when you are busy rushing through summer fun, why not have an easy dinner idea that can be your go to?
Dishes to make with Shredded Chicken Taco Meat
The obvious answer here is tacos of course, but you can make quesadillas, taco salads, burritos, burrito bowls, taquitos or tostadas. This chicken is also awesome for a big pan of sheet pan nachos. Add tortilla chips to grocery list!
It is the perfect recipe for meal prep because you can use it in a variety of ways. I personally like to serve mine in corn tortillas street taco style with jalapeno, onion, and queso fresco. However, if you like flour tortillas or crunchy taco shells feel free!
Set up a taco bar and let everyone dress it the way they like.
What to Serve with Chicken Tacos
In terms of toppings, I keep it simple with jalapeno, onion, and queso fresco. Radish, pico de gallo, avocado, sour cream and all of your favorite taco toppings are welcome.
On the side try some Mexican rice, black beans or refried beans.
Substitutions and Additions to Crock Pot Chicken Taco Recipe
While this recipe uses green salsa or salsa verde, you could definitely use red salsa. Additionally, if you like things creamy, you could add in some cream cheese at the end to suit your tastes.
I also use boneless chicken breasts, but if you prefer boneless skinless chicken thighs, feel free to do that. Just know that using dark meat or bone in chicken will increase the cooking time. I have tested it, but I’d estimate 6-8 hours.

Notes and Tips for 3 Ingredient Crock Pot Chicken Tacos
As this recipe states, it takes 3-4 hours in the slow cooker. Keep in mind that if you double the recipe, use really thick chicken breasts or your slow cooker doesn’t cook as hot, you may need 6-8 hours. Slow cookers and variations in your meat selections can have an effect here.
If you want to shred the chicken really fast, try using your hand mixer right in your crock pot. It really does make quick work. I tend to use 2 forks, but it really depends on how much you hate shredding it versus how many dishes you’d like to do.

- 1 Slow Cooker
- 3 Large Chicken Breasts Around 1.5 lbs
