If you run into anyone in the grocery store, they will be sure to mention the high price of food. I find when I am trying to cut down the grocery bill, I try to make recipes with fewer ingredients. This pot roast is easily the best pot roast I’ve ever made. It’s great for the dutch oven or slow cooking. Either way you will get a flavorful roast with this Easy Pot Roast with Onion Soup Mix.
Secrets to Perfect Pot Roast that Do not Require Additional Ingredients
Part of the magic of cooking is knowing the methods that develop flavor. You can add all the good ingredients you want, but if you can’t execute with technique, it will ultimately fall flat. Whether you want to do this all in one dutch oven or make this as a slow cooker recipe, you want to start by heating a heavy bottomed pot over medium-high heat.
Add 2 tbsp. of olive oil. to the pot. Do not use too much oil. The meat has a lot of fat and an over abundance of oil will just steam your meat rather than sear it. Searing develops flavor. It gives you those brown bits that scrape off the bottom and produce flavor in your sauce.
Even if I make this in the slow cooker, I make it a point to start with this first. I then make sure I pour in the onion soup gravy mixture and scrape up those brown bits before transferring it to the slow cooker. After this simply step you’ve got 8-10 hours before you even need to touch it again!
Trust me when I say this step is worth it.
If you are pressed for time, you can skip it, but it is so good and trust me that once you do it, you won’t want to skip it. That crispy crust is the best part.
Reduced Ingredients- The Magic of Easy Pot Roast with Onion Soup Mix
One of the ways that we reduce the number of ingredients required is to add the Lipton dry onion soup mix, gravy packet and seasoning the outside of the roast with Montreal Steak Seasoning. I use the one by McCormick, but even Aldi has a version of it.
The Lipton Recipe Secrets Beefy Onion soup is my favorite, but seriously store brand is fine too.
This seasoning has the garlic powder, onion powder, black pepper and some salt that you need for a really flavorful sear. These items have all the things you need so it eliminates buying all of these ingredients individually. When you make any dish, it’s a great idea to think through what ingredients you can use that would do double duty.
Can I use other vegetables besides carrots and potatoes in Pot Roast?
Of course you can! My favorite vegetables to use are baby carrots, russett or baby potatoes (red potatoes work too) and sometimes onion or celery. If you wanted to add green beans, fennel, cabbage, sweet potatoes, or whatever root vegetables you think you’d like- go for it. This recipe is incredibly versatile.
What to Serve with Pot Roast
Honestly you have a full Sunday Dinner and the ultimate comfort food with the pot roast ingredients alone, but if need some sides add a green salad and always serve with a glass of red wine. I also like to omit the potatoes sometimes and serve the meat, root veggies, delicious gravy with egg noodles.
These simple ingredients make for a meal the whole family with love and you really don’t need to add bunch of expensive things to make this classic pot roast meal a favorite!
How to Store Leftover Pot Roast
Leftover pot roast is fine in an airtight container for 3-4 days. We often eat it the next day for lunch. It’s just too good and holds up to being warmed up! I love turning the leftovers into hot roast beef sandwiches with gravy or I will freeze the leftovers for later meals. If you have a vacuum sealer , it’s a great way to freeze meal portions for later!

Easy Pot Roast with Onion Soup Mix (Slow Cooker or Oven)
Ingredients
- 2 lb Chuck roast
- 1 tbsp. Montreal Steak Seasoning
- 1 Package Lipton Onion Soup Mix beefy variety if you can find it
- 1 Package Low Sodium Gravy Mix
- 3 cups water
- 1.5 lbs russet potatoes
- 1 lb. Carrots
- 2 tsp. Salt
- 1 tsp. pepper
- Parsley for garnish
- 2 tbsp. olive oil
Instructions
- Preheat oven to 275
- Sprinkle Montreal Steak Seasoning over roast. Pan sear the roast on medium high heat until a crust forms2 lb Chuck roast, 1 tbsp. Montreal Steak Seasoning, 2 tbsp. olive oil
- Mix together the onion soup, gravy, and water .1 Package Lipton Onion Soup Mix, 3 cups water, 1 Package Low Sodium Gravy Mix
- Place the potatoes and carrots over the roast . Add salt and pepper .1.5 lbs russet potatoes, 1 lb. Carrots, 2 tsp. Salt, 1 tsp. pepper
- Pour the gravy mix over the roast and put the lid to the dutch oven on.
- 275 for 2.5 to 3 hours or until meat is shreddable and tender .Parsley for garnish
Slow Cooker
- Pan Sear your roast for best results. You don't need to do this, but your results will be better.
- Follow all other instructions, but cook on low 8-10 hours or high 4-6. Roast is done when it's fork tender.
