Honey Mint Vodka Mojitos

Honey Mint Vodka Mojitos are so refreshing. The temps here are in the high 90’s and my mint plant is going crazy. I like a cocktail that is not to sweet or overly complicated. You won’t find me drinking super sugary frozen drinks. I keep my cocktails like my coffee- simple!

By infusing the mint into the simple syrup we cut out the step of having to muddle the mint.  The simple syrup takes on that subtle mint flavor without having to put in the extra work!

Simple Syrup with Honey

Simple syrup is just a 1:1 ratio of sugar to water cooked down into a syrup. When you do it with honey you don’t get the same thickness, but you do get a lovely floral flavor. Additionally by making the simple syrup with honey you don’t have to use refined sugars.

You could make a big batch of the honey mint simple syrup and have it ready in the fridge for this cocktail and others. No matter the volume you make, the ratios are the same.

Aren’t Mojitos made with Rum?

Yes! traditionally mojitos are made with rum. I am not the biggest fan of rum and so I just prefer this vodka version. You can replace the vodka in this recipe with rum though. That’s totally up to you!

Honey Mint Vodka Mojitos

Honey Mint Vodka Mojitos are a fresh take on a classic mojito. Simple syrup is made with honey for a no refined sugar refreshing cocktail.

Ingredients

  • 1/2 cup Honey
  • 1/2 cup Water
  • 1/2 cup Mint Leaves Plus a few more for garnish
  • 1/4 cup Lime Juice
  • 3/4 cup Vodka Titos is my favorite.
  • 1 cup Club Soda
  • 1 Lime Sliced for garnish

Instructions

Honey Mint Simple Syrup

  1. Put water, honey and mint into a small sauce pan over medium heat. Mix together and cook over medium heat for about 7 minutes until it's come together and you start to smell the mint. Set it off the heat to allow it to cool. Leave the mint there to steep. It will be cool enough to strain into a container in about 30 minutes.

  2. In a small pitcher mix together the vodka, honey mint simple syrup, and lime juice.

  3. Take 4 small cocktail glasses and add ice. Be generous with the ice. Fill the glasses halfway with the cocktail mixture. Top off with club soda or seltzer. Garnish with limes and mint.

Recipe Notes

I used small 6  ounce cocktail glasses for this. You'll get 4 small drinks or 2 tall drinks from this amount of mixture. Use the toggle on the recipe card to double or triple the recipe for more.
