I love brunch. You probably already know this by the waffle, frittata and muffin recipes you find on the blog already. Recipes like this Breakfast …
oups are easily one of my favorite meals. I make Minestrone style soups all the time. My White Bean and Kale Detox Soup is a good example. I am feeling a little indulgent these days with all of the colder weather, so I decided to replace the beans or pasta I would normally use, with tortellini. I’ve seen many versions of soup with tortellini. I think there is no better fit than minestrone for a good cheese tortellini. I call this Healthy Italian Minestrone with Tortellini because other than the tortellini, it’s a really light soup.
I won’t lie. It’s hard to be a healthy food blogger this time of year. All of my blogging friends are posting these beautiful decadent …
Now that we are all moved into our new house, I’ve wanted to bake. This is different for me, because I’ve never considered myself a baker. The urge to fill the house with comfort is strong, so these Pumpkin Chocolate Chip Monster Cookies seem like the perfect way to do that.

Who likes a one pan plan? Okay, I got it out of the way. I said it. I love rhyming catchy names and I love meals like this. One pan, a few simple ingredients, tried and true techniques, and dinner is on the table! I’ve seen a lot of pins and blog posts on these sheet pan dinners, so you know I had to come up with one. This recipe is the champion of spaghetti squash recipes. Is it just that good? Well, yes, I think it’s very good. The real reason it’s the champion of spaghetti squash recipes is that it’s the first time my husband has been willing to eat it. Success! Victory is mine! Trust when I say that these Turkey Bolognese Spaghetti Squash Boats are a crowd pleaser. The slow cooked sauce is full of flavor and the cheesy topping feels indulgent although this is a really healthy and gluten free dish.
It’s one of those weekends where I am ashamed to admit that I had more carbs than protein. Far too many sweets were consumed. I …
When the cooler temps hit, it’s time for the root veggies of fall. Those root veggies include one of my favorites, butternut squash. It’s sweet, buttery, and it just exudes autumn. This Kale and Roasted Butternut Squash Salad is perfect for a light lunch or as a side on the Thanksgiving table. One of the most important things to do when you’re eating healthfully is to eat in season. It’s not only cheaper, but tastier.
Feel free to get creative with this salad as a base. You could use this same preparation and instead of butternut squash, you could use acorn squash, apples, or sweet potatoes. The hearty kale can take the dressing and the heat from the roasted vegetables without becoming wilted. That’s the beauty of kale. It stands up to being dressed before the party, and even the leftovers are delish right out of the fridge.
