Banana Bread is probably the ultimate beginner baking recipe. It’s easy, affordable and delicious. Bananas are perfect for baking because they provide moisture and sweetness without a ton of butter and sugar. This carrot cake banana bread is great choice for your Spring brunch table. If you’re making it for brunch, I ‘d recommend the suggested crumble topping. If you’re making it for an after dinner treat, I’d recommend the optional cream cheese frosting.
This recipe is in the category of “kinda healthy.” I added coconut oil, whole grains and used honey instead of white sugar. The crumble topping is a bit of an indulgence. We love banana bread around here so I like creating new ways to enjoy it and this carrot cake banana bread hit the mark for sure. The lesson here is don’t waste your bananas.
Speaking of not wasting bananas, we have an on going joke with friends about just that. We got in the car to go on vacation with them and there were like 5 bananas up front. I gave a little chuckle and commended her healthy snack choice. We discussed how we just hate to waste bananas. I think we managed to eat all but 2 and I learned she loves bananas too. Banana french toast and pancakes were just a few of our breakfast treats. This was an eating vacation for sure. I had to detox upon our return. You know that feeling. You get home and you swear you’re eating nothing but lettuce and water ever again. It was such a tasty trip. I’d totally suffer the pounds gained once again just to enjoy that blood orange mimosa and California omelet. Gosh… I am hungry.
