oups are easily one of my favorite meals. I make Minestrone style soups all the time. My White Bean and Kale Detox Soup is a good example. I am feeling a little indulgent these days with all of the colder weather, so I decided to replace the beans or pasta I would normally use, with tortellini. I’ve seen many versions of soup with tortellini. I think there is no better fit than minestrone for a good cheese tortellini. I call this Healthy Italian Minestrone with Tortellini because other than the tortellini, it’s a really light soup.

Turkey Bolognese Spaghetti Squash Boats
This recipe is the champion of spaghetti squash recipes. Is it just that good? Well, yes, I think it’s very good. The real reason it’s the champion of spaghetti squash recipes is that it’s the first time my husband has been willing to eat it. Success! Victory is mine! Trust when I say that these Turkey Bolognese Spaghetti Squash Boats are a crowd pleaser. The slow cooked sauce is full of flavor and the cheesy topping feels indulgent although this is a really healthy and gluten free dish.
White Bean and Kale Detox Soup
It’s one of those weekends where I am ashamed to admit that I had more carbs than protein. Far too many sweets were consumed. I am literally craving healthy food. White Bean and Kale Detox Soup is just a giant bowl of yummy good for you food. White beans provide fiber and protein, and the…
Citrus Spicy Chicken Tenders
People ask me all the time if I just come up with all of my recipes on my own. Truth be told, there are really few things that haven’t been done. Food blogging is about being inspired. I see an enchilada recipe and that prompts recipes like my Layered Roasted Vegetable Enchiladas. It’s not that…
Italian Turkey Veggie Meatloaf
Let me start by saying I think these little meatloaves are just adorable. I love a small package and my Italian Turkey Veggie Meatloaf recipe means no one will go without their favorite piece. Most of the time meatloaf is one large loaf. This means a fight for the end piece, so you could say…
Kale Caesar Pasta Salad
I love kale. There I said it. I know it’s not the most popular thing to say in some circles, but I really do love kale. The last picnic I attended, I brought kale chips. I made everyone try one. As expected some loved them and some did not. Bottom line- I am an ambassador…
Zucchini Stuffed Lasagna
I know we’ve all seen those zucchini “noodle” recipes floating around the internet. While I enjoy a zoodle as much as the next person, in lasagna, I need the noodle. My husband needs the meat, and neither of us is a fan of ricotta. As you can imagine this Zucchini Stuffed Lasagna pretty much answers…
Roasted Chili Taco Casserole
There’s a common misconception about food bloggers. That is we just never cease to enjoy slaving over a beautiful meal fit for the cover of Food and Wine. The truth is food bloggers are just like you. Sure, we love to cook on most days, but we also come home from a hard day and…
Easy Fresh Tomato Basil Marinara
Summer is winding down, so it means that the farm markets and our own gardens are over flowing with produce. If ever there was a time to do as the squirrels do and stock up, this is it. I love getting into the kitchen and cutting corn off the cob, freezing fruit, making jam, and…
